Berry Angel Delight

This sounds yummy and so easy!

Ingredients
1 cup whipping (heavy) cream
2 tablespoons sugar
2 cups Yoplait? Thick & Creamy vanilla yogurt (from three 6-ounce containers)
1 round angel food cake (8 inches in diameter), cut into 1-inch pieces
1 cup fresh blueberries
1 cup quartered fresh strawberries
1 cup fresh raspberries

Directions
1. In chilled medium bowl, beat whipping cream and sugar with electric mixer on high speed until stiff peaks form. Gently stir in yogurt.
2. Place cake pieces in large bowl; gently stir in yogurt mixture. In medium bowl, gently mix berries.
3. Spoon half of the cake mixture into 9-inch springform pan; press firmly in pan with rubber spatula. Top with half of the berries. Repeat with remaining cake mixture; press with spatula. Top with berries. Cover and refrigerate at least 4 hours or overnight.
4. Run metal spatula carefully along side of dessert to loosen; remove side of pan. Cut dessert into wedges.

I'm making this tonight. I'll let you know how it comes out tomorrow night. ;)

I do not have a spring form pan so I am using my loaf pans.....should work fine though.

It is going to be soooooo yummy after painting and cleaning the condo all day tomorrow!!! :thumb:

This cake was very easy to make. It is delicious too! Very light and refreshing. Perfect for a hot day since it is served cold.

I am already thinking up some variations on the recipe......pineapple coconut, mandarin orange, strawberry banana.

Since I do not have a spring form pan I put parchment paper in the bottom of my square pan so I would be able to flip it out of the pan easily. Worked great!

My sister and I give this cake an 8 on the scale of 1-10.

My brother in law has been helping me with my condo and all he wanted in return was one of these cakes!!

He loved it last time I made it.

His cake is in the fridge and will be delivered to him tomorrow. I made it with strawberries only this time. I hope I get a peice of it :cryingwlaughter:

My brother in law is going to Mexico this Saturday (may be gone a long time or forever :laugh:) so I am making this cake tonight and taking it to him tomorrow.

It is also my sis's birthday tomorrow!
